Ingredients
4 medium Russet potatoes
2 tsp. olive oil
1 tsp. salt
2 tsp. pepper
2 Tbsp. butter
¼ cup Maple Bourbon Bacon Jam
½ cup shredded mozzarella
Fresh parsley, minced (for garnish)
Taste of Cajun Seasoning (optional)
Instructions
Rub potatoes with oil, salt and pepper. Wrap in foil and place on a preheated BBQ on high heat. Bake 55-60 minutes or until potatoes are fork tender. Open the potatoes and top with butter, Maple Bourbon Bacon Jam, then mozzarella cheese. Garnish with fresh parsley and a sprinkle of Taste of Cajun Seasoning, if desired.
